Star Wars Day Kitchen Essentials!

Greedo Smoothie
Hardcore fans will debate forever about the “shot” between Greedo and Han. One thing you will not be able to debate is the deliciousness of this smoothie! Green to commemorate the controversial character bounty hunter, this smoothie will pep up your day enough to outdraw an outlaw! Look out, Han!
Ingredients:
1 undrained 14.5 oz. can pineapple tidbits in pineapple juice
1/4 apple with skin (minus core) – we used pink lady or cripps pink
6oz frozen or 1 fresh mango – a little over 1 cup
1 cup of vanilla almond milk or 8 oz. vanilla yogurt
2 HUGE handfuls fresh spinach
1/2 cup water
Preparation:
Put everything in a blender and blend together until smooth (about 5 minutes). Pour into your favorite cup (I use a double barreled tumbler) and go get that green! Yes, that was a bounty hunter double-entendre

Chewie’s Wookiee Cookies
Chewbacca (AKA Chewie, which is PERFECT for naming a cookie after) is one of the most beloved characters of the movie series. We spiced up our chocolate chip cookie recipe to pay the perfect respect to him. It packs quite a flavorful punch!
Ingredients:
1 cup light brown sugar, packed
1/2 cup granulated sugar
1 cup salted butter, softened
2 eggs
1 tsp vanilla
2 1/2 cups all purpose flour
1/2 tsp baking soda
1/4 tsp ground ginger
1/2 tsp cinnamon
1 tsp chili powder
3/4 cup dark chocolate chips
Preparation:
Preheat oven to 375°F. With an electric mixer, beat both sugars, butter, eggs, and vanilla for about 2 minutes. In a separate bowl, sift the flour, soda, ginger, cinnamon, and chili powder to remove any lumps. Stir dry ingredients to distribute. Add wet ingredients and chocolate chips to the dry ingredients. Stir until no dry ingredients are visible but do not overwork dough. Drop 1/4 cup of dough 4 inches apart on a foil lined baking sheet. Bake for 11-13 minutes. Remove from baking sheet to cool. The unique spices in this cookie is good enough for a wookiee… and may put some hair on your chest, too!

E-Wok ‘n’ Roll
This recipe is our take on stir fry. It is the perfect way to get veggies into the little Ewoks, too!
Ingredients:
4 tsp soy sauce
2 tsp mirin wine
2 tsp corn starch
4 TBSP water
1 fresh garlic clove, finely minced
1 tsp – 1 TBSP fresh grated ginger
1-2 celery rib, sliced on a diagonal
1-2 carrot, sliced
1 cup broccoli flowerettes
2 zucchini, cubed
1 cup snow peas
large container button mushrooms, quartered
4 green onions, halved lengthwise and cut in 1″ pieces
2 handful(s) bean sprouts
2 cups of prepared rice
Preparation:
In a small sauce pan, combine soy sauce, wine, corn starch, water, ginger, and garlic over medium heat until thickened (about 3-5 minutes). Add 2 TBSP cooking oil to a wok or large frying pan over medium-high heat. When oil is hot but not smoking, add celery, carrot, broccoli, and sauce for about 3 minutes or until broccoli is cooked but still firm. Add zucchini, snow peas, and mushrooms and cook an additional 2 minutes. Add green onions for 30 seconds, remove from heat and add sprouts. This meal, packed full of nutritious veggies, will prepare you to defend your world against the evil empire! YUB NUB!
