Ingredients:
4 cups shredded, white meat chicken (**see below)
1 cup raw rice, prepared
1 can seasoned black beans, heated through
1-2 cups shredded lettuce
caramelized onions and/or bell peppers, any color
Guacamole
Sour cream
Salsa or tomatoes, OR BOTH!
Preparation:
Layer bowl: Rice on bottom, then beans, chicken, sauteed onions/peppers, lettuce, guacamole, sour cream and salsa and/or tomatoes.
** Chicken Preparation Suggestion
Sprinkle fajita seasoning over white meat chicken. Heat 1 TBSP of canola oil in a pan over medium high heat. Add chicken and sear 3-4 minutes per side. Add 1 TBSP lime juice when you turn the chicken, or add it to the pan juices before you pour it over the shredded meat. Cover the pan with a tight fitting lid. Remove pan from the heat and let it sit for 20 minutes. Use 2 forks to shred the chicken in a bowl, then pour the pan juices over the shredded chicken.

Looks delicious, uses chicken (bet it would work with turkey, too, an authentic Mexican ingredient), and eliminates the dreaded 'flour' tortilla. Never been a fan of those US-invented things
