These flavorful treats are addicting and they never last long in the Dining Downloads kitchen! You can play with spices (adding dill, italian season, etc) but below you will find a basic recipe. If you like pickles, this recipe is a MUST! You could even change it up and use this recipe for all sorts of fresh veggies; carrots, asparagus, green beans, okra, red onion. Let your imagine go wild with it. It is so easy, even the kids can do it!
Ingredients:
1 large cucumber, peeled and sliced (pickle chip sized)
3/4 cup water
1/4 cup distilled white vinegar
1/2 large onion, finely minced
1 TBSP salt
1/2 TBSP sugar
1/4 tsp crushed red pepper flakes (optional)
3 cloves garlic, pressed or minced (optional)
Preparation:
Place the sliced cucumbers in a container (we use a glass dish with a locking lid). Place all ingredients except cucumbers in a pot over medium-high heat. Bring to a boil for 1 to 2 minutes. Pour hot liquid over the cucumbers and stir to distribute the slices in the liquid. Place in the refrigerator for at least 15 minutes. The longer they sit, the better they taste!
